
One of my favorite "meal" salads is Southwest Chicken Salad; it's filled with lots of protein, a variety of veggies and a little southwest kick. All that flavor and crunch together make this salad a "must make". It's especially good as a light supper in the summer; for those evenings when it's too hot to cook.
Southwest Chicken Salad
4 cups torn romaine lettuce
1 cup cooked diced chicken
1/2 cup shredded cheddar cheese
1/2 cup black beans -- well drained
1/2 cup corn -- well drained
1 small tomato, diced
1 small red onion, diced
Crushed tortilla chips (optional)
Dressing:
Sorry, but I don't have any measurements on this, but I usually mix Hidden Valley Light Ranch Dressing with medium salsa or picante sauce. Sometimes I add a little light sour cream, or taco seasonings such as ground chili powder and cumin. It all tastes good, try any flavor combination you like!
